I'm a huge, long standing Death fan but a friend is a intollerable Carcass Fan (He'd suck amott off given the chance!). I'm sure your're familliar with the situation. Who is better?

I reckon its quite difficult to compare them though because they both contributed a lot to that world, and are completely different bands on their own right, e.g. Death's original provision of open 5ths(as in music theory) into death metal's songwriting, through which many bands have benefitted in the 21st century, and their philosophical image they evoke - and with regards carcass Bill Steer's fluid, tasty solos as well as their eerie, creepy atmosphere THEY evoke, which as you can see from bands like aborted, impaled and necrophagist, was latched onto quite enthusiastically.
So rather than comparing them to see them as 2 pillars of 3rd generation metal. Both necessary and not at all mutually exclusive to what death metal is today.
