Lyrical themes with composition and instrumentation define a genre .For instance in black metal,lyrics mostly have Anti-Christian, Misanthropic, Satanic, Luciferian, and Pagan basis.

Any of these alone dont define a genre in my opinion except maybe in NSBM.The difference is only in lyrical themes, which usually deal with NS ideals, racism, paganism, pride of heritage or nation, and hate.

I guess you could to so if you want to. I've experienced a minor difference between them, though. Pagan black metal tend to have slower melodies and have folk influences, whilst satanic black metal is faster and more raw.

But what if a band played slower, folk influenced melodies in the "Pagan Black Metal" style, but sung about Satan?

Windir was great. I've never been a fan of Finnish folk metal, though. Finntroll seemed a bit "unserious" last time I heard them, but that might just be me.
