You should really check out the album "Legend Of The Bone Carver" by Pyramaze, if you haven't heard it. :] Real good shit. The album is from 2006 so technically it isn't "new" but it may be new to you.

Check out Yearning, pretty melodic, but not symphonic. You might like Epica.

Eluveitie is a folk/melodic death metal band that sounds pretty epic most of the time. Brainstorm (the German one) and more recent Amorphis might fit the bill too.
